I haven't posted in quite some time.  So, I apologize for that.  Life took a turn for the worse and I ended up hospitalized.   I should have been dead, but my Precious Savior preserved my life yet again.  We also, Praise God, discovered I've been misdiagnosed for 8 years and been on the wrong medication.   He brought us out of the dark valley and set our feet upon the rock.  Needless to say, GAPS ended rather abruptly.  But we had accomplished 24 or so days of it!  I was pretty proud.  Plus, I also discovered I was allergic to some tree nuts.  And that's a huge discovery. Sounds disgustingly healthy, huh?  Yeah, tell me about it.  If you would have told me a few months ago that I would be bathing in kelp and drinking broth every meal I would have looked at you as if you had grown a second head.  But alas, here we are....bathing in kelp and drinking broth....EVERY meal.   As I mentioned on my last post we can have egg yolks on stage 2, but not egg whites.  So, we have to meticulously separate the whites from the yolk.  This can get a wee bit pricey wasting all the egg whites and so my brilliant mom suggested that we freeze them.  I first bulked at that … [Read more...]

Stage Two of GAPS

Stage Two of GAPS

We are finally on the second stage of GAPS.  It is hard.  REALLY hard.  Jon and I are pretty darn healthy, but because I think I have more toxins in my body I took it a bit harder.  Not to mention last week was pretty hellacious.  I needed this week to be productive and I needed my body to cooperate with me!  It has definitely been challenging trying to make the foods tasty without having much seasoning.  But, we’ve been putting salt and pepper on everything and that has helped tremendously.
